As a working mom, I love using my slow cooker to create simple and delicious meals. This apricot chicken recipe is one of my family favorites. The sweet apricot sauce is so tasty and the recipe uses chicken thighs which makes it budget friendly.
Apricot Chicken
1 small jar apricot preserves (11oz)
2 teaspoons dijon mustard
1 Tablespoon soy sauce
1/2 tsp chili flakes (optional, if you like heat)
6-8 chicken thighs
Place chicken in your slow cooker. In a separate bowl, mix the apricot preserves, mustard, soy sauce and chili flakes if you are using them. Pour sauce over chicken. Cover and cook on low 6-8 hours or high 4-6 hours.
Remove chicken from the crock pot and shred, removing all bones. Serve over rice.
Quick, delicious and budget friendly. My kind of meal.

This recipe sounds yummy! In our household we love to eat chicken and rice in many different ways. Now we have another new way with this recipe and I gotta say I’m excited!
Made it last night served with couscous and roasted broccoli. Very good! However, when I ask my kids what they thought so I could respond to a blog, they both said, “what would you say if we hated it?” Good thing they didn’t. Thanks for an easy idea!

I would say it serves about 4 based on the serving shown in the picture. I have a family of 3 and we usually have about one more serving left over.
This has been simmering in my crockpot for a few hours and the entire house smells amazing! Definitely a great meal for a cold and snowy night. Looking forward to eating it with some couscous and a salad!
