I always find myself trying to cook at least 2 meatless meals per week even though nobody in my family is a vegetarian.  There are so many benefits to cooking meatless:  the meals are usually less expensive, it provides less strain on the environment and can help minimize your carbon foot print.  Best of all, meatless meals can also open your mind to a variety of new foods you never thought to try!

When my husband and I were first married he let out a small groan when he heard we were eating a meatless meal that night.  He is a “meat and potatoes” kind of guy and thought that a meal without meat would never be able to fill him up.  That is why I was so happy when I came across this cookbook, The Meat Lover’s Meatless Cookbook by Kim O’Donnel.  It is full of hearty and delicious recipes that both meat lovers and carnivorous will enjoy.

The cook book is loaded with delicious recipes that leave your meat lover satisfied.

  9. I have been going very meatless lately. I have a bunch of favorites but right now I’m loving simple black bean + cheese quesadillas and roasted (non-breaded) eggplant rolatini!

  10. Eggplant Parmesan, stir frys with tofu and anything with black beans or chickpeas as the starring role!

    If my fiancee weren’t a big meat eater, I could easily eat vegetarian 5 days a week. Any take on Mexican or Asian cuisine subbing tofu or beans for meat is simple and delish!

  13. Wow – this cookbook needs to be in my collection! I am a 10 year vegetarian but my bf is a hardcore meat eater. Fortunately, he is also open-minded so he will eat anything I make, including tofu, but it would be great to expand on my meaty meatless recipes!

    Right now our favorite is tacos made with soy crumbles. Spicy, hearty, and less greasy than hamburger…we both love them!

    I eat meatless all the time! It’s so yummy, so fast, and I love bright flavors. One of my favorites is an asparagus, farro, lentil, couscous, (grain mix) salad with goat cheese and meyer lemon. Mmmm Mmmm good!

    My favorite meatless meal I recently discovered is an enchilada with beans, tofu, and diced sweet potato topped with fresh avocado! It sounds a bit crazy but is so delicious and filling. I am finishing my last year at Marquette and could definitely use this cookbook to start my collection out on my own.

    I’ve been testing out some meatless lasagna ingredients lately. I also really enjoy a good bean burrito for a quick dinner night as well. My hubby is definitely a meat and potatoes person though too!

    I recently discovered quinoa. I really like a Mediterranean quinoa salad I found. My husband who usually doesn’t venture far from his comfort foods really enjoyed it too. Now it is one of his favorites!

    I love meat, but I do try to eat less of it. Nothing beats grilled vegetables on the grill – with a little Parmesan at the end, it’s healthy and friends/family are always amazed how something so simple can be so good and filling!

    I’ve just started adopting a vegetarian lifestyle. Right now I am loving sauted mushrooms and spinach with roasted garlic and olive oil, then topped with some Fontinella cheese and placed on a thin bun! YUM!

    Soy bean stroganoff. Sauteed onions and mushrooms with tomato paste, soy beans, garlic, paprika, a bit of vege stock and then sour cream (or toffuti) – served with egg noodles or rice. Comfort food that you’ll only realise is not meat if someone mentions it.

    I love spicy indian curries and other hearty vegetarian entrees (like one of my personal favorites – aloo gobi – consisting of potatoes & cauliflower in spicy sauce). They are warm, filling and you truly don’t miss meat. Thanks to a wonderfully stocked asian market nearby, I am able to reproduce my favorites utilizing prepared spice blends – since I am an admittedly “lazy cook”!     Even though we are senior citizens, we are learning to eat healthy and smart just like our daughter and her husband. Meatless meals are MUCH appreacited by me, but far less by my husband. I think this book would help a lot to win him over. In the meantime, he’s usually happy with Dreamfield’s lower carb pasta with homemade marinara and fresh basil leaves.

    I really have a hard time coming up with meatless meals. My hubbie loves meat in his dinner and is upset if it’s missing. One that I did sneak by was baked potato soup. There was the option of bacon…but so little. I had to count that as meatless. 🙂

  83. Meatless Mondays are my new obsession – mostly because I get to be creative in making all-vegetarian (but usually vegan) recipes! I love making a base of quinoa and adding different mix-ins to make it delicious and different every time. Last time I included dried cranberries and it was AMAZING.
