Bacon & Broccoli Quiche

There is something about a quiche that is so comforting and delicious. It is perfect for breakfast, but can also be eaten for lunch or a light dinner.  Quiche are so easy to make and using premade pie crust helps cut the prep time in half.

I make this Bacon & Broccoli Quiche if I am hosting a brunch or for a simple weeknight family dinner and serve it with a side of thinly sliced apples. It is also the only way I can get my husband to eat broccoli!

Broccoli & Bacon Quiche

1 pre-made roll-out pie crust
8 slices cooked and crumbled bacon
1 c. frozen or fresh broccoli, cooked and chopped
1½ c. mozzarella or swiss cheese
6 lg. eggs
1 c. half and half
¾ tsp. salt
⅛ tsp. pepper

Heat oven to 425 degrees. Put uncooked pie crust into a pie pan and crimp the edges.  Mix the bacon, cheese and broccoli together and place on top of the pie crust. In a separate bowl, beat eggs slightly with half and half, salt and pepper.

Pour egg mixture over pie. Bake 15 minutes. Reduce heat to 300 degrees and bake 30 minutes longer or until done.

Peanut Butter Oatmeal Chocolate Chip cookies

Yes, you read that right.  All 3 cookies put into one.

This recipe is probably the best cookie recipe I have.  It makes the most divine cookies with just a hint of peanut butter and oatmeal and the perfect amount of chocolate chips. I dare you to make these cookies and not eat at least 3 right out of the oven.

Peanut Butter Oatmeal Chocolate Chip Cookies

1 cup all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
½ cup creamy peanut butter
½ cup granulated sugar
1/3 cup brown sugar
1 teaspoon vanilla extract
1 egg
½ cup rolled oats
1 cup semisweet chocolate chips

Preheat over to 350 degrees.

In a small bowl, mix together flour, baking soda and salt.

Next cream the butter, peanut butter, sugars and vanilla together on low speed for about 3 minutes. Then add the egg and and beat until well combined. Slowly mix in the flour mixture until just combined.

Stir in oats and chocolate chips.

Scoop dough out using a large cookie scoop. (2-3 tablespoons per cookie) Bake for 10 minutes or until the tops are golden brown.

Next time you want to make cookies and can’t decide what kind to make, just make these!  I promise you will not be disappointed.

Red and Gold Oscar Party

I love being a hostess and can always seem to find an excuse to throw a party.  This year I decided to host an Oscar party for some of my girl friends.  We ate, drank, filled out our ballots and, most importantly, took in the fashion!

The invitations were made to look like Oscar envelopes.

The girls were greeted with ballots to fill out before the Oscars started.

We snacked on a spread of food that was all made using Wildtree products.

For Dessert, we ate red velvet cake iced with cream cheese frosting and topped with the hollywood sign!

Popcorn and movie theater candy were also available for guests to snack on.

What will be your next excuse to throw a party?

Consignment Shops {U-Turn}

Have you ever looked in your closet and ask yourself, “do I really wear all of this?” Well, this happens to me quite often. And to make matters worse, some of those things jammed way in the back still have tags on them. I often take clothing to goodwill, but wondered if I could get money for some of these expensive clothes that are gently used or, in come cases, brand new. Well, thanks to the resurgence of consignment shops, now I can!

Last summer, a new consignment shop opened in Milwaukee called U-Turn. I dropped off about 15 items and 2 months later they sent me a $74 check! I was amazed and now have made it my mission to go through my closet every couple months to get rid of the things I don’t wear. It is a win-win, my closet gets more organized and I get a little extra spending money.

I sat down with the ladies of U-Turn, Deb and Jessica, to ask them about how they run their store and what kinds of things they look for when accepting clothing.

Why did you decided to open the shop?

Deb and I have known each other since our boys were in senior kindergarten. Deb does finance in the car industry and I am a Speech Pathologist. We were both looking for a change, although we both still work in our professions on a limited basis since opening a business is a scary thought at times! We had been talking and throwing out ideas for businesses one summer night at a friend’s backyard fire pit, but nothing seemed good at the time.

Then one fall morning Deb saw me at school drop off, and asked what I thought about a young adult consignment shop. I said I had never really considered it before, but we started doing our research. The next thing you know we were asking family and friends what they thought of various names for the shop and standing in front of the city board with our business plan!

Explain to me how U Turn works. What kinds of items will you accept?

Although our original intent was to focus on teens and provide both men’s and women’s clothing, we have evolved to offer mostly women’s clothing. We love our faithful men shoppers, but let’s face it, most of the shopping is done by girls and women, so our men’s section has dwindled to a rack or two.

We prefer styles that are current. Items that sell quickly are higher end brands and pieces from boutiques – anything different and original. We are not brand specific.   Customers love clothing that has never been worn or looks barely worn. As a first time consignor, think about if you or your best friend would still wear it out around town and let that be your guide for if you should bring it in.

We accept sizes from 14/16 juniors to Woman’s size 18. We may occasionally turn away a size if we have too much of it in stock, or ask that you hold on to it and bring it back at a later time.

How do consignors make money?

When we sell an item the consignor makes 40% of the sale. We pay out when their account hits $20.00 or all the items in their account have sold. They just drop off the clothes and we take care of the rest!

Do you have any tips for people who would like to bring in clothing and accessories sell?

Potential consignors can download a copy of the consignment policy from the website here and fill it out ahead of time. Consignors should have clothing pressed and cleaned and on hangers. It is much easier and faster for us to go through them this way. When potential consignors bring in clothing, they can shop around while we go through the items. The whole process should only take about 10-15 minutes depending on the amount of items you bring in or how busy we are. If a consignor’s items are sold, they can either have the money via check or come to U-Turn and use the accrued money in their account for in store credit.

Do you only sell consignment clothing?

We also sell items for local artist. We do ask that they use some type of recycle/reuse with their products. We have some great artists in here.

I can tell that you try to make your store “green.” What kinds of things to you do to create less waste in the world?

We try to make our carbon footprint as small as possible. Our shopping bags are made from tee-shirts donated by customers and friends, a bundle of 10 will get you 5% off one item. If a customer brings back the bag to use for another shopping trip they will get 10 cents off their order. We also do carry a few new line items also that support the environment. Our Tees for change for example, the company plants a tree with every sale of a shirt. Our snack bags are great for reducing the amount of plastic baggies we use in our lunches.

I love the thought of  recycling clothing and it makes me feel like I am still helping to minimize my carbon footprint…every little bit helps!  And, best of all, I have picked up many unique and one of a kind items at U-Turn.

Do you have a consignment shop in your area?  Just do a quick internet search…and then go attack that closet!

Happy Cleaning!

Earth: A Rustic Outdoor Dinner Party

Earth’s crave comfort and have a need to be surrounded by family and friends in a warm, loving environment.  That’s why I planned a Rustic Outdoor Dinner Party for those who most identify with the Earth Element.  Dinner parties are a great way to reconnect with friends and family and hosting it outside in the late summer months gets rid of any space restraints you may have in your home. It allows for the host to have a party with more space to accommodate all of the guests.  Incorporating burnt orange, natural colors and wood accents sets the stage for the perfect earth dinner party.

Molten Chocolate Cake

A couple years ago, my husband and I went on cruise with some friends and discovered something called Molten Chocolate Cake.  We ate it every day for a week, sometimes requesting seconds.   It is a moist, souffle-like cake that is served in a ramekin.  When you put your spoon into the cake, the center is warm, gooey and all chocolate.

I had spent the past 3 years trying to find a recipe for this delicious cake and am happy to say that I have finally found one that rivals  the cake we had on the cruise.   I think it is the perfect treat to share with your special someone on valentines day.  It is rich, chocolaty and oh so good.

Molten Chocolate Cake

Ingredients for Cake Centers:
2 ounces bittersweet chocolate
1/4 cup heavy cream

Ingredients for Cake:
Nonstick cooking spray
4 ounces bittersweet chocolate
1 stick unsalted butter
2 whole large eggs
2 large egg yolks
1/3 cup sugar
1/2 teaspoon vanilla extract
1/4 cup cake flour

Directions for centers:
Melt chocolate and cream together in double boiler and mix together until well combined. Refrigerate for about 2 hours or until firm. Then, scoop out the chocolate and form it into 6 equal sized balls and refrigerate until needed.

Directions for cakes:
Preheat oven to 400 degrees F. Spray six 4-5 ounce ramekins with cooking spray.

Melt chocolate and butter together in double boiler until well blended.  Using an electric mixer, mix eggs, yolks, sugar and vanilla extract on high speed for about 5 minutes or until thick and light.

Fold the melted chocolate mixture and flour into the egg mixture until just combined and divide batter evenly into greased ramekins.  Then, place a chocolate ball in the middle of each ramekin.

Bake about 15 minutes.  Remove from oven and let sit for about 5 minutes.

Top with powdered sugar or berries and whipped cream.

One bite and you will be in chocolate heaven!

Goat Cheese, Apple and Pine Nut Pizza

I love experimenting in the kitchen. Some of my favorite recipes happen by accident when I am forced to substitute ingredients because I have run out of something. Sometimes it works and sometimes it doesn’t, but each time I learn something new and have even created a few favorite recipes.

One really easy way to experiment with flavors in your kitchen is to make homemade pizza. I always try to have pizza crust on hand because whenever my refrigerator and pantry shelves are empty, I can still come up with enough ingredients to make a pizza.

That is actually how I created this recipe. The combination of toppings may sound bizarre, but one bite and you realize it really is divine!

Goat Cheese, Apple and Pine Nut Pizza

1 apple, very thinly sliced
goat cheese
handful of pine nuts
about ½ cup mozzarella cheese
1 prebaked pizza crust
olive oil

Preheat your oven to450 degrees.

Take your pizza crust and lightly brush it with olive oil. Top with a very thin layer of mozzarella cheese, followed by desired amount of goat cheese, apple slices and pine nuts. Drizzle with olive oil and top with any dried herbs you may have on hand, I used marjoram and thyme.

Place directly on oven rack and bake for 8-10 minutes or until crispy and golden brown.

Enjoy!

How To: Hang Curtains

I am not much of a procrastinator but when it comes to projects around my house, I tend to put them off.  I realized that I have lived in my home for over 2 years now and still have not gotten around to hanging curtains. Simple task? I wasn’t sure, but I realized it was time for me to dig out the tool box and find out.

Turns out, once I committed to getting them hung, it only took a couple hours. When I saw the results, I was blown away at how such a small change could transform the room. It added instant warmth and I was so happy with the results.

Here are some before and after pictures:

Although hanging curtains seems like a daunting task, it it pretty easy if you follow some simple steps and have the right tools.  Here are some tips I learned along the way from source: bestroutertablepicks.com.

Gather these supplies:

curtains
curtain rods along with the brackets and screws that come with them
measuring tape
electric drill or screwdriver
pencil

Follow these simple steps:

First, start by measuring the length of your curtains and deciding how far from the floor you would like them to be.

Take the measurement of the curtains and add the desired distance from the ground. Then take this number and, with your tape measure, measure up from the floor and mark on the wall with a pencil. This marks the height of where you will hang your brackets.

Decide on the spacing of the brackets and mark both sides of the window with a pencil where the screws will go, ensuring they are exactly the same distance from the ground and match up with your measurement from the floor.

Next, place your curtain on the curtain rod and hold it up to this spot to “test” it and be sure you like the distance and the way they will look.

Finally, drill the holes for the bracket and fasten your brackets to the wall.

Once your brackets are up, you can hang your curtains.

Sounds simple, and surprisingly it is!

Cheesy baked Artichoke Dip

I was so excited when cheese was selected as our Wisconsin secret ingredient. After all, I am a born and raised Wisconsin girl who knows any recipe that showcases cheese is sure to be delicious!

One of my favorite appetizer recipes is this cheesy artichoke dip. It’s got only 4 ingredients, 2 of which are, you guessed it, cheese. It is so easy to make and very indulgent. Every time I bring this to a party, it is usually gone before I can go back for seconds.

Cheesy baked Artichoke Dip

16 ounces shredded Mozzarella cheese
1 cup grated Parmesan cheese
1 cup mayonnaise
1 cup (about 8 oz. can) artichoke hearts, drained and chopped

Mix ingredients together. Bake in a casserole at 350 degrees for about 30 minutes or just until brown on top. Serve with cubes of crusty bread or assorted crackers.

Enjoy!
